These are around 30-35 cents and come in individual boxes/packets. (I usually use Jiffy or Great Value.) You just add water, and roll it out. As you can see, I got the edges nice and neat. lol

Next, you spread on the sauce. (I used spaghetti sauce.) Now, sprinkle on some grated cheese, and add the toppings. Bake at 425 for 15 minutes.

We actually made two pizza's. The other one was vegetarian style. But, it will take a little longer to cook if you start with it frozen.

Shortcut Enchiladas

Okay, I've been completely neglecting this blog! Drain them and make mashed potatoes. (Mix them up with an electric mixer, adding a little milk, until smooth.)

Now for the ham: I use what I call "fake ham." It's actually turkey sold in a chunk of meat that looks and tastes like ham, only it's a lot cheaper. (You'll find it in the lunch meat section by the ham.) You can use "real" ham if you prefer, or if you have leftovers, that would work great. Cut this up into bite sized pieces. (about 1-2 cups.) Oh, and make sure whatever kind of meat you choose is already cooked.

Mix the potatoes and meat together. Spread this mixture into a casserole dish and sprinkle 1-2 cups grated cheese on top. Stick it in the oven and bake at 350 for about 20 minutes.

Orange Salad

Here's another salad/dessert for ya. I'm doubting there are any hands raised right now. But, just in case.......Here are the instructions.

1 lb ground beef
1 taco seasoning packet
tortillas
toppings (lettuce, cheese, tomatoes, etc.)

Brown the ground beef. Drain the grease. Add the seasoning packet with 1/4 cup water, simmer for a few minutes.

For the tortillas: You can either buy the crispy or the soft. With the soft ones, I like to either warm them up in the oven (wrapped in foil) for a few minutes, or fry them in vegetable oil on the stove for a few minutes. This is optional.

Now you are ready to make the tacos. I'm not going to explain this part, I mean REALLY.

Cheater's Stew

I thought I would give this stuff a try. So, here's an outdoor dinner idea.

Put some hamburger, and whatever veggies you want on a piece of tinfoil. Season.
Wrap it up. We cooked ours for about 20 minutes. As you can see, the potatoes got a little burned. ( I would save this one for one of those days when you're feeling especially lazy.)

Parmesan Chicken

1-2 eggs
italian bread crumbs
pasta
fresh or frozen/thawed chicken tenders
spaghetti sauce
vegetable oil

There's no exact measurements for this recipe. It just depends on how much you think your family will eat.

Boil the pasta according to package directions. (You can use any kind you like.) Meanwhile, put the eggs in a bowl and beat them. Sprinkle some of the bread crumbs on a plate. One at a time, dip the raw chicken in the eggs, then into the bread crumbs to cover it.

Pour a little bit of vegetable oil into a skillet and heat it up. (You only need enough to cover the bottom of the skillet, you don't want the chicken swimming in it.) Carefully place the chicken into the oil and cook until it's golden brown on the bottom, then turn it over and cook the other side until the chicken is cooked through.

Take the chicken out of the skillet, drain the excess grease. Put the cooked/drained pasta into the skillet and pour the spaghetti sauce over it. Place the finished chicken on top. All done!

And, if you're wondering what the weird little thing covered with cheese on this plate is.... It's a half of a leftover hamburger bun with cheese and garlic salt, broiled in the oven for a few minutes. (Our own garlic cheese bread.) Sometimes we have to get creative with our leftovers.

Barbecue Hamburgers

We love cooking outside when it gets hot. I've found that if I make this with a good salad or some veggies it makes it more tolerable.

Enchiladas

1 lb ground beef
2 Tbl taco seasoning
1 can pinto or black beans (optional) I like these because it adds some texture and makes the meat go further to make more enchiladas
1 10 oz can enchilada sauce (I use the Walmart "red sauce" it's cheap!)
10-12 tortillas
2-2 1/2 cups grated cheese

Brown the ground beef, drain the fat and add the taco seasoning, stir. If you want to add the beans, add them to the meat and stir together.

Place some of the meat mixture, a little cheese and a little sauce in each tortilla. Roll them up and place them on the pan. Here's a few pictures to show the process.

Spread the sauce over the top. My kids don't like these "spicy" so this is the amount of sauce I use. If you want them more saucy, you'll have to buy the "bigger" can of sauce. (This picture also demonstrates the amount of enchiladas this recipe makes. I have to use two pans, but if you have a huge casserole dish, you could probably jam them into one. Also, I don't put very much meat in each one, if you want them meatier, you could use fewer shells. It's all personal preference.

The next step isn't shown........But, sprinkle the remaining cheese on top. These can be served with lettuce, tomatoes, guacamole, sour cream. Whatever you want.

A little side note: If you want these crispier and you have the time, you can individually fry the tortillas in vegetable oil for a few minutes before you add the ingredients and roll them up. They're really good this way, but it does take awhile. Also, if you have leftover chicken, roast beef, or pork, you can substitute it for the ground beef. This is a great way to use up those leftovers.

Baked Apples

This is one of those desserts that I don't feel too bad about serving my kids. This way, we have plenty of leftovers for lunch the next day.

Homemade Play Dough

Um, we didn't actually have this for dinner. Well, except Tayvin did have some for a little appetizer. But, our actual dinner tonight was nothing to blog about, (think frozen corn dogs thrown into the oven at the last minute.) How do you cook dinner when your son has a baseball game at 5:30?

So, this is the extent of my cooking today.

1 cup flour
1/2 cup salt
1 tsp. vegetable oil
1 cup water
1/2 tsp. food coloring

Mix ingredients in a saucepan. Cook over medium heat until the dough leaves the sides of the pan, stirring constantly. Remove from the pan and knead for a few minutes. Store in a tightly closed container. Sprinkle with a little salt. Combine the milk and whipping cream. Pour over the potatoes. Bake at 375 degrees for 30-40 minutes. Keep an eye on these and stir them up every once in awhile while they are cooking, otherwise the edges tend to burn. Just don't burn your hand on the top of the oven like me! It's pretty self explanatory and I'm quite sure everyone already knows how to make it. But hey, it's another dinner idea. (The whole point to this blog.)

1 loaf of french bread
spaghetti/pizza sauce (whatever you have on hand)
1-2 cups grated cheese
toppings (whatever you like)

Buy a loaf of French Bread. This one is my absolute specialty. I'm really good at it, cuz I make it A LOT............

Fast Food:

We tried this at Burger King tonight, but it works at almost any restaurant.

First, you need to be really busy all day long. You can't have time to go shopping for groceries, let alone make dinner. It helps if you have whiny kids, visiting teaching appointments, laundry, cleaning, babysitting, and a sporting event for one of the children. When it's close to the time you should be starting to make dinner, some kind of disaster should happen that takes lots of time to clean up or take care of.

When your husband comes home, throw all the kids in the car and head to the nearest and cheapest restaurant you can find.

When you get inside the restaurant, have everyone yell at the same time what they would like. Sometimes it's a nice touch to have a few kids ask for something that's not on the menu.

When you finalize what you are going to order, it's really fun to try to find a worker that doesn't speak english. This really adds to the ambiance of the occasion. And, you never know what you will actually get, so if you like surprises, this works like a charm!

Check the receipt a few times for accuracy........That can't be right!! All we ordered was a few hamburgers, who do they think they're kidding?

Now, it's time to eat the greasy/unhealthy food. Make yourself feel guilty because you are feeding your family trash for dinner AGAIN.

This is my absolute FAVORITE part of the whole fast food experience. Make a huge mess at the restaurant, throw food all over the floor, and run out the door hoping nobody noticed.

Drive home and enjoy the thought of not having to wash any dishes or clean up the mess you just made.

Crock-Pot Chicken Tacos

I feel that I need to give credit where credit is due on this one. It came from my Mother-In-Law, and I use it all the time because it is so good and easy!

1 small jar of salsa
1 can black beans
4-5 frozen chicken breasts
1 can corn

Just throw all the ingredients in a crock-pot in the morning (without draining anything.) Let it cook all day. Right before you are ready to eat it, pull the chicken out and shred it up. Throw it back in and stir everything together. (At this point it looks kind of gross, but it is really good, I promise.) Spoon this mixture into taco shells, and you're ready to eat. You can add cheese, lettuce, and whatever else you put on tacos if you want.

Quick Lasagna Casserole

1 lb ground beef
1 jar spaghetti sauce
1 small container cottage cheese
1 egg
8 oz bow tie pasta
2 cups grated cheese

Boil pasta according to package directions. In a separate container, combine the cottage cheese and the egg, stir. After the pasta has been boiled and drained, layer half of it across the bottom of a 10x10 (or similar) glass baking dish. Then pour the cottage cheese mixture on top and spread it over the pasta. Layer half the meat mixture over the cottage cheese. Sprinkle about 1/4 of the cheese on top. Layer the rest of the pasta, the meat, and the remaining cheese.
