Fruit Crepes

2 beaten eggs
1 1/2 cups milk
1 Tbl vegetable oil
1 cup flour
2 Tbl sugar

Mix everything together well. Pour 3-4 Tbl of the mix into a heated skillet. (If you use anything but a skillet with a non-stick surface, you will have to grease it first.) Spread the batter out thinly by tilting the pan slightly in all directions. Let it cook a little, then flip it over and just lightly brown both sides.

Add whatever fruit you want to the middle and roll it up. We put whipped topping on the top of ours. I know some people put cream cheese in with the fruit. Whatever trips your trigger!

These are more of breakfast/dessert type crepes. If you would rather have less sweet "dinner crepes" with meat, eggs, vegetables etc, use this same recipe, except take out the sugar and add 1/4 tsp salt instead.
